Sotol
Sotol is a type of spirit that is made from the Desert Spoon plant, also known as sotol, which grows in northern Mexico and some parts of the southwestern United States. It is similar to tequila and mezcal, but with a unique flavor profile. To make sotol, the Desert Spoon plant's leaves are roasted and crushed into a pulp, which is then fermented and distilled. Unlike agave, which is the main ingredient in tequila and mezcal, Desert Spoon takes much longer to mature, so the process of making sotol is much more time-consuming. Sotol has a distinctive herbal flavor with notes of pepper, smoke, and hints of citrus. It can be consumed neat, as a shot, or mixed with other ingredients to make cocktails. Sotol was traditionally consumed by indigenous people in the Chihuahuan Desert region, but it has gained popularity in recent years among spirit enthusiasts who value its unique flavor profile and cultural heritage.
